Sunday baked brunch: This is the most basic North American breakfast you can cook — two eggs, potatoes, bacon — done up a little differently, in the neverending quest to do new things with classic concepts. Sometimes it’s the simplest expressions that capture one’s creativity. This meal is done entirely in the oven. The eggs are baked in ramekins with cracked pepper, scallions, salsa, and herbs. The bacon is cooked over the potatoes with thyme and pepper. If the ingredients are good, you can’t go wrong with simplicity.
